Ketofied Kannoli PanKakes

How many times have you seen an AMAZING recipe and wished for all of the ingredients to just go ahead and make it!? I know I have on more than one occasion!

Well today, I saw this amazing recipe for cannoli pancakes and thought, WOW! I haven't had many cravings for sweets these days #ThanksKetones ... but I couldn't resist the thought of trying this recipe out for myself. But then I got to thinking and knew I could definitely swap a few ingredients out and make it keto friendly! AND I had everything I needed to create this TODAY!!

So here you go, guys! <3

A completely Ketofied recipe for Keto Kannoli PanKakes ;)

You will need:

For Kannoli
2 cups heavy whipping cream
1/3 cup powdered Swerve
1 tsp cinnamon
pinch of nutmeg
1 cup ricotta
1 cup Lily's chocolate chips

For PanKakes
1 cup almond flour
1/4 cup coconut flour
2 tbsp granulated Swerve
1 tsp baking powder
6 eggs
6 tbsp unsweetened nut milk
1 tbsp butter
1 tsp pure vanilla extract
pinch of salt


I started with the Kannoli first but you can start with either recipe :)

Combine heavy whipping cream, powdered Swerve, cinnamon & nutmeg. Beat together until stiff peaks form. Then fold in ricotta and chocolate chips and set aside.


Next, for your PanKakes! Add all the ingredients together in a large bowl and whisk together until smooth. It will be similar to regular pancake batter so if it's too thick, you can add more nut milk!


I like to use my griddle -- super easy clean up but you can use a skillet or pan! Spoon batter onto warmed griddle. Cook until bubbles start to form and then flip! 


Plate your panKakes and top with Kannoli!

I am seriously so excited with how these little cookie dough fat bombs turned out! The fact that I can eat cookie dough & burn fat still blows my mind! This lifestyle has been the easiest transition ever for me! I don’t feel deprived one bit, I’m shedding inches every week & I just feel SO good!
