Chicken Meatballs with Curry Sauce

The past 2 weeks, my mom and I have implemented meal prep days! If you’re not familiar with this, it’s where you devote a few hours each week to preparing meals ahead of time — that way, all you need to do in the midst of a busy schedule is plate, heat and EAT!

It’s been a huge success for us! This recipe is one of our favorites so far and has been a hot for our families! You know it’s good when it’s kid AND spouse approved! 🀣

And it has an option to be dairy free!

Ingredients

Meatballs 

1 lb ground chicken
1/4 cup coconut flour
1 large egg
2 cloves garlic
1/2 tsp ground turmeric
2 tsp curry powder

Sauce

2 tbsp coconut oil
1 cup full fat coconut milk/heavy whipping cream -- if you're making this dairy free, choose the coconut milk
garam masala seasoning to taste

Directions

Preheat your oven to 350

Mix up your ground chicken, coconut flour, egg, garlic, and spices in a bowl. Roll up medium sized meatballs. 



Bake at 350 in for 35-45 minutes. 
35 for smaller meatballs/45 for larger.


While your meatballs bake, start on your sauce.


Heat coconut oil and coconut milk/heavy whipping cream over med-low heat.
Stir often to prevent burning!

Add your garam masala seasoning to taste.

If you want to make the sauce thicker, add in some coconut flour.


When the meatballs are finished, top with your tasty sauce and serve with your favorite side dish. Some of our favorites have been zoodles, caulirice or my favorite low carb noodles.

I am seriously so excited with how these little cookie dough fat bombs turned out! The fact that I can eat cookie dough & burn fat still blows my mind!
