Chicken Meatballs with Curry Sauce

The past 2 weeks, my mom and I have implemented meal prep days! If you’re not familiar with this, it’s where you devote a few hours each week to preparing meals ahead of time — that way, all you need to do in the midst of a busy schedule is plate, heat and EAT! It’s been a huge success for us! This recipe is one of our favorites so far and has been a hot for our families! You know it’s good when it’s kid AND spouse approved! 🤣 And it has an option to be dairy free! Ingredients Meatballs   1 lb ground chicken 1/4 cup coconut flour 1 large egg 2 cloves garlic 1/2 tsp ground turmeric 2 tsp curry powder Sauce 2 tbsp coconut oil 1 cup full fat coconut milk/heavy whipping cream -- if you're making this dairy free, choose the coconut milk garam masala seasoning to taste Directions Preheat your oven to 350 Mix up your ground chicken, coconut flour, egg, garlic, and spices in a bowl. Avocado Crusted Chicken with Bacon Sauce

Lately, we've been crazy busy during meal times so I haven't had a chance to try out any new recipes. Last night was an exception and I'll definitely be making this one again! It combines some of my favorite ingredients and is hubby approved! I personally kept the chicken dairy free (so our 2 year old with a dairy allergy could enjoy it). You will need: 1 lb chicken breast 1 tbsp. avocado mayo 4 slices of your favorite bacon 1/2 cup heavy whipping cream 1 tbsp cream cheese 1 tbsp parmesan cheese garlic powder Himalayan sea salt to taste Preheat your oven to 400. Rinse the chicken and pat dry. Spread the avocado mayo evenly over the chicken breasts. *Optional - top with Parmesan cheese if you are incorporating dairy. Bake for 50 minutes or until the juices run clear. For the sauce, which is not dairy free, grab a skillet. Warm the reserved bacon grease and heavy whipping cream. Wait, WHAT!?!? There’s absolutely NOTHING better than fitting into your clothes! I vowed that 2018 would be the year that I rocked confidence in my body from beginning to end! Motivation Monday ✨ I am learning everyday to allow the space between where I am & where I want to be INSPIRE me 40 weeks pregnant with Breyson —Today I knew after I had B my body wasn't going to just bounce back. I knew I was going to have to work really hard but life threw me some unexpected curve balls.... 1 year postpartum, I was diagnosed with Hashimoto’s & 2 1/2 years postpartum, I found myself in the absolute WORST crash of my life! There have been countless ups & downs between these pictures. But I can honestly say I am SO much stronger now because of them! Physically AND Mentally! I used to let how far I have to go intimidate & frustrate me. Now, it truly inspires me to give it my best. I know you that no matter what life throws at me — I'm going to keep on fighting! 🙌🏼 Change takes time! It doesn’t happen overnight! Love yourself & your body in the process!

Let's talk recipes! How many times have you seen an AMAZING recipe and wished for all of the ingredients to just go ahead and make it!? I know I have on more than one occasion! Well today, I saw this amazing recipe for cannoli pancakes and thought, WOW! I haven't had many cravings for sweets these days #ThanksKetones ... but I couldn't resist the thought of trying this recipe out for myself. But then I got to thinking and knew I could definitely swap a few ingredients out and make it keto friendly! AND I had everything I needed to create this TODAY!! So here you go, guys! <3 A completely Ketofied recipe for Keto Kannoli PanKakes ;) see what I did there?? You will need: For Kannoli 2 cups heavy whipping cream 1/3 cup powdered Swerve 1 tsp cinnamon pinch of nutmeg 1 cup ricotta 1 cup Lily's chocolate chips For PanKakes 1 cup almond flour 1/4 cup coconut flour 2 tbsp granulated Swerve 1 tsp baking powder 6 eggs

Lemon Cheesecake Fat Bombs - Keto Approved!

New fat bomb coming at ya! And, whoa ... it is GOOD! Lemon Cheesecake Do I have your attention??  GOOD!! <3 You will need: 1/2 cup coconut oil 1/2 cup unsalted butter 8 ounces of cream cheese 4 tbsp Swerve 2 ounces of freshly squeezes lemon juice zest of 1 lemon The texture of these is absolutely perfect! I like to let mine sit out for just a couple minutes to slightly soften. The coconut oil gives them a slight "crunchy" texture. It's like eating a candy bar! Bust out your mixer! Throw in your ingredients and mix until smooth! Spoon your batter into a plastic bag and cut a whole in one of the corners. Gently squeeze your baggie into your silicone molds ... or use a mini ice cube tray, silicone cupcake cups or even directly onto wax paper.  Freeze until firm! The Ultimate "CHEAT" Meal ... Pizza!!! -- Keto Approved!

I feel like I need to preface this post! Guess what guys, I AM NOT PERFECT!  And here lately, I've been craving pizza! Which is super weird for me because with my gluten sensitivities, I rarely crave it ... mostly because it makes me feel SO AWFUL!! Thankfully, a few weeks back, we went to a friend's house who is also on this keto WOE and she made the BEST keto-friendly pizza! Tonight  I made it for myself and sure enough, it was as heavenly as I remembered! I seriously think it's even BETTER than the "real deal!" You will need: 1 1/2 cups of shredded mozzarella cheese 3/4 cup of almond flour 2 tbsp of cream cheese 1 egg seasonings of preference First, preheat your oven to 425.  Next add your mozzarella cheese and cream cheese to microwave safe bowl. I've been so excited to share this recipe with you guys! Starbucks Sous Vide Egg Bites have quickly made their way to my list of best grab and go keto-ISH friendly foods for those crazy busy days! These delicious little delicacies have been enjoyed since their arrival at Starbucks! The name along makes me feel so fancy for just ordering them! And let's face it, at $5 per order they should! It's no wonder that I'm saving so much money now by skipping my daily Starbucks run!
