I've been so excited to share this recipe with you guys! Starbucks Sous Vide Egg Bites have quickly made their way to my list of best grab and go keto-ISH friendly foods for those crazy busy days! These delicious little delicacies have been enjoyed since their arrival at Starbucks! The name along makes me feel so fancy for just ordering them! And let's face it, at $5 per order they should! It's no wonder that I'm saving so much money now by skipping my daily Starbucks run!
Anyways, with my new found energy and love of trying out new recipes, I've decided to try my luck at these in my Instant Pot! The recipe I found uses the same ingredients listed on the Starbucks website and avoids adding extra equipment like a Sous Vide machine. One less thing to clutter up my kitchen! And pleasantly, I found this recipe to be really, REALLY close to my beloved Starbucks version!
This recipe is simple, quick and only uses a few ingredients that you probably already have in your kitchen --- egg, bacon, cheese, cottage cheese .... but don't worry, it excludes carrageenan.
I wanted to keep the circular shape so I bought this baby food tray (#Amazon) or you could even use mason jars if you have them already! I doubled the recipe I found so I'd have enough to last me all week! #LessMessLessStress
8 Large Eggs
8 Bacon Strips - avoid nitrates whenever possible!
2 Cups of your favorite cheese -- I have used both Monterrey Jack and Gruyere! Gouda is next on my list!
1 Cup Cottage Cheese
1/2 Cup Heavy Cream
1/2 tsp. Salt
Hot Sauce

Put 1 cup of water in the bottom of your
Instant Pot. I still have no idea why I was so terrified to use this for so
long! It literally sat on my counter for weeks before I braved my first use!
Set the trivet that came with your pot
inside.
Cook the bacon utilizing your favorite method to cook bacon. I personally love cooking mine low and slow on our griddle!
Add a dash of hot sauce if desired and blend. You can use as little or as much as you'd like! Or even avoid it altogether if it's not your jam ... but how can it not be!?
Pour the egg mixture evenly into your tray. It took me 2 full containers (14 bites total)! I had enough to last me for a whole week! Just pop 2 in a container every day and I'm ready to go!
Cover your tray with the lid (loosely) and place this carefully inside your Instant Pot.
Place the cover on the Instant Pot, select "Steam" and set to 8 Minutes.
Once finished, let your Instant Pot natural pressure release for 10 minutes and then quick release the rest.
Carefully remove the egg bites
from the Instant Pot and let cool down for a few minutes ... if you can wait!
Enjoy immediately or
refrigerate for up to a week!
I'm always in a hurry in the mornings and
these babies store perfect in the fridge all week! They reheat well and keep
your belly happy! I pair them with either extra bacon, because BACON ... or
some maple chicken sausage that I've recently become OBSESSED with! Thank the
Lord for Whole Foods!
