One of my favorite things to make for breakfast is eggs! They’re quick, easy & budget friendly! Since transitioning over to a ketoISH lifestyle, I’ve been collecting new lower carb recipes to try out. This one did NOT disappoint! π€€
You will need...
2 eggs
1-2 slices of bacon
Your favorite cheese
1 ripe avocado
Equipment wise, I did all of the cooking on my griddle — but you can use whatever works best for you! There’s nothing wrong with a good old fashioned skillet! ππ½♀️ I also found these handy little rings to make perfect circle eggs! Amazon π
To start, out these rings on your griddle — mine is nonstick, so you may need to spray your pan! If so, use coconut oil spray! I cook everything on a lower setting so I avoid burning the house down if I have to go separate my kid & my kitten (π€·π½♀️π It’s almost like having two kids!) On my griddle, the temp I cook at is 275 on the stove, I’d cook on either the 3-4 setting.
Crack your eggs right into these little cups! Aren’t they cute??
Flip once you start to see the white become non translucent.
Then I just cook my bacon right on the other side of the griddle — this is WHY I love the griddle! Less mess for Mama to clean up! ππΌ
I always cook an extra piece of bacon ... I’ve learned that what’s mine is B’s! So when he heads my way to steal my bacon, I hand him his own! #DontStealMyBacon
While the bacon and eggs are cooking, you can prep you avocado! Isn’t this one gorgeous!? I can never seem to get them when they’re perfectly ripe but I FINALLY did. And just in time for this blog! Coincidence??
Cut your avocado in half. Remove the seed and store the other half for later in the fridge! Then put your avocado in a bowl and add your favorite seasoning! I added FlavorGod’s Garlic Lovers! MASH!!! I like my avocado to be nice a smooth but mash it up to your desired consistency.
By this time, you should have your eggs all cooked. I plate them & put my favorite cheese on top to melt. On the other egg, add your mashed avocado!

Add your bacon. I broke mine in half and they fit on my sandwich perfectly!
Put the two half’s together and dive right in!
